The menu includes meat produced within the prefecture and vegetables aged in snow rooms, a style unique to snowy regions.We aim to use locally produced ingredients and provide dishes that are unique to the local area.Enjoy the special pairing of wine and food that can only be found at Kinseki no Oto, including dishes cooked over a fire made from burning grape vines and accented with wild vegetables that grow in the vineyards.

Chef's special soup that pairs perfectly with wine.
One of the dishes in the course is potato soup.At first glance it seems like an ordinary menu item, but the potatoes used are matured for around three months in a snow room, and the dish is topped with a floating puree of burdock, giving it a Joetsu flavor.

We believe that meat with too much marbling is unsuitable for dishes other than yakiniku and shabu-shabu, so we deliberately select cuts with less marbling.The fillets and lean meat are slowly grilled over a grapewood-burning flame to bring out the aroma, while the tendon parts are stewed in red wine that is almost too good to be used in cooking.The Kubiki beef hamburger steak is a popular menu item that ranked 7th in the national rankings.
