We also pay special attention to firewood...
-
Grape branches are used as firewood! This is a grilling method that the chef saw previously at a restaurant in Bordeaux, France. The restaurant roasted it using Cabernet Sauvignon wood, but ours, of course, uses Muscat Bailey A wood.Enjoy meat dishes unique to wineries, infused with the distinctive aroma of grape vines, along with red wine.

Chef's special soup that pairs perfectly with wine.
One of the dishes in the course is potato soup.At first glance it may seem like an ordinary menu item, but the potatoes used are matured for around three months in a snow room, and the dish is topped with a floating puree of burdock, giving it a Joetsu flavor.
